Dan has had a dynamic culinary journey, starting with his return to Sydney after a stint in New York. He took on the role of Head Chef at Merivale’s Lotus restaurant, where he introduced fresh Asian flavours to the menu. His next venture was as Joint Head Chef at Ms Gs in Potts Point, where he could fully showcase his heritage and culinary creativity.
Following the success at Ms Gs, Dan ventured into new territory with Merivale's Mexican cantina, El Loco. However, his most significant challenge came in August 2012 with the opening of Mr Wong, a large 240-seat Cantonese-style restaurant in Sydney’s CBD.
Now as Executive Chef of three Merivale restaurants – Ms.G’s, El Loco and Mr Wong – Dan has cemented himself as one of Sydney’s most creative and fastest rising chefs. Renowned for incorporating myriad flavours to his cooking, bold and brilliant, Dan continues to prove himself one of this country’s most exciting culinary talents.
